Daiya Creamcheese Roll-ups
2 small zucchini
1 container Daiya chive and onion creamcheese
approx. 1/2 cup fire roasted tomatoes or red peppers
With a veggie peeler, peel thin strips of zucchini. Place the strips on a greased cookie sheet and broil them (475f) in the oven for about a minute (less if they start browning too quickly). Spread a few chunks of Daiya cream cheese along each strip of zucchini. Roll the strips up into "sushi-like" rolls and top with Fire roasted tomatoes or peppers.
I served these as-is at our small (4 adults, 3 kids) New Years Eve party this year just as they appear here, but I also think they'd be great with a little balsamic vinegar sprinkled on top.

These sound great and love that they are gluten free, dairy free, soy free! I just bought myself a mandolin slicer to make zoodles so I will give these a try, too. Be sure to share the recipe with Daiya!!
