Cold and cold and more cold outside, White Bean Chicken Chili simmering inside
11:43 AMI have HAD IT with Winter... but it doesn't seem to be getting the message since today it is snowing again with a windchill advisory of -8. This is actually pretty unusual around here, but there isn't much anyone can do about it. So, lets make some chili!
White Bean Chicken Chili
Modified from Giada De Laurentiis's food network recipe
1 large onion, chopped
6 garlic cloves, minced
2 pounds chopped chicken breast

1 tablespoon fennel seeds
1 tablespoon dried oregano
2 teaspoons chili powder
3 tablespoons tapioca or potato starch

2 (15-ounce cans) cannellini or other white beans
1 bunch (about 1 pound) Swiss chard chopped, stems included!

11/2 cups frozen peas
4 cups chicken stock
Freshly ground black pepper for seasoning
Seasalt to taste

1/4 cup chopped fresh flat-leaf Parsley
Put everything in a crockpot and let it simmer on medium for 4 hours or low for 6 hours.
