Coconut lime white fish: the fish recipe that fish-haters enjoy eating!

So, how do you get a family that doesn't like fish to eat it? Well... I put this together the other day and it was really different for us, and super delicious. Not at all "fishy" and got us some Omega3 fatty acids. Dairy free, Corn free, easily wheat free, and about 1 Carb (15grams carbohydrate) per serving. Served it with sweet potato and green salad.
Defrost fish, if needed. Preheat oven to 375f. Combine eggs and juice of 1 lime, beat until incorporated and set aside. Break up bread into chunks and put it into a blender along with the coconut, salt, hemp seeds, garlic, and pepper. Pulse the mixture in the blender until you have "seasoned breadcrumbs".
Coconut Lime White Fish
36 ounces tilapia fillets (or Haddock, Pollock, Cod etc)
Juice of 1 lime
2 eggs
1 cup plain breadcrumbs (I keep frozen bread heals for this purpose)
1/2 cup unsweetened coconut
Seasalt to taste
1/3 cup hemp or chia or flax seeds

1/2 teaspoon cracked black pepper

Spread the breadcrumbs out on a large plate. Dip fish fillets in the egg wash and then in the breadcrumbs (on both sides). Place on a wire rack over a cookie sheet (I like to line mine with aluminium foil to keep clean up easy).
Bake fish in the oven for about 15 minutes, or until it flakes when tested with a fork.
