Farmhouse Apple Cake
12:37 PMHere it is, guys! The crowning glory of Autumnal decadence... my unforgetable, glorious, and amazing applecake recipe that I got from a multi-generational farm kitchen up in the "north country" and have over the years made my very own.
Farmhouse Apple Cake
3 cups whole wheat flour
1 cup light olive oil
3 tsp baking powder
2 1/2 cups sugar
4 eggs
2 tsp vanilla
1tsp salt
5 or 6 apples
2 tsp cinnamon
1/4 cup applecider
Peel and core apples. Cut apples into slices and toss them in a bowl with 1/2 cup sugar and 2tsp cinnamon. Set aside.
Preheat oven to 350f
Combine remaining ingredients in a large bowl and beat until smooth. Fold apple mixture into the batter.
Pour batter into a well-greased and floured bundt pan. No, really... A LOT of flour or it'll definitely stick in the pan and cause a lot of sadness when you try to get it out!
Bake 90 minutes, or until a knife comes out clean.
Cool and serve. Stores well in aluminium foil, and freezes well.
