2 Birthdays, 2 Dairy-free Corn-free Cookie Cakes. Molassas and Double Chocolate

The snow just keeps falling and falling and falling around here.  I'm pretty sure I haven't seen the sun in about a week!

Despite the weather,  we celebrated 2 birthdays in our house this weekend!  My eldest turned 4, and Hubby turned 29... again...

We made 2 amazing, delicious cookie cakes that disappeared before the weekend was over!  And we did it 100% Dairy and Corn-free.

Chocolate Chocolate Chip Cookie Cake

2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
 2 sticks margarine (Earthbalance), softened
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs, beaten
1 tablespoon vanilla
1/2 cup unsweetened cocoa
2 cups chocolate chips (Wegmans brand or Sunspire)
Powdered Sugar (Wholesome Sweeteners Brand, made w/ Tapioca Starch)

Preheat oven to 375 degrees. In a bowl stir together flour, salt, and baking soda. In another large bowl stir together margarine, granulated and brown sugars, eggs, vanilla and cocoa. Gradually stir flour mixture into margarine mixture and mix until combined. Stir in chocolate chips until they are evenly distributed.

Take the entire ball of cookie dough and press it flat firmly into a greased 9 inch springform pan.  

Bake in oven for 12-14 minutes.  Let cool in the pan.    Remove from pan and sift powdered sugar over the top for a "snowy" topping.


Soft Molassas Cookie Cake
Modified from Food.com's recipe for Soft Molassas Cookies
3/4 cup Margarine (Earthbalance)
1 cup packed brown sugar
1 large egg
1/2 cup molasses
2 1/2 cups all-purpose flour
1/2 teaspoon salt 
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon allspice
1 teaspoon nutmeg
Powdered Sugar (Wholesome Sweeteners Brand, made w/ Tapioca Starch)
Cream together shortening and brown sugar. Stir in egg and molasses and mix well.  Fold in dry ingredients and stir until evenly combined.
Cover and chill until firm (1-2 hours).

Preheat oven to 350°.

Take the ball of dough and press it firmly (until it's flat and even) into a greased 9 inch springform pan. 

Bake in oven for 12-14 minutes.  Let cake cool and set on the counter until entirely cool.  Remove from pan and sift powdered sugar over the top for a "snowy" topping.

ENJOY!  These don't last long!
