Dinner, made simple and delicious out of stuff you already have in your cupboard: Kidney Bean Casserole
11:55 AMIt's 2 degrees today... as it has been (on average) for the last 2 weeks. I DID NOT want to make a random special trip to the grocery store in this weather, so I dug through the pantry, the root cellar (yep, we have one of those), and the freezer. I turned up the ingredients for this super-basic and satisfying recipe!
Kidney Bean Casserole
1 lb ground beef
1 large onion, sliced
4 large white potatoes thinly sliced (or 3 medium Russets)
1 small can diced tomatoes
1 large can kidney beans
salt and black pepper to taste
In a skillet, brown together beef and onions. Place most of the beef and onions on the bottom of a casserole dish (or 2, 9 inch pie pans... if you're like me and couldn't find your casserole dish...). Arrange sliced potatoes on top. Top with kidney beans and the remainder of the beef and onion mixture. Pour tomatoes over entire dish. Salt and fresh cracked pepper to taste (or add red pepper flakes, if you like it spicier).
Cover with foil and bake at 325f for 1 hour.
