Super-Party finger food starring Daiya "creamcheese" : Who says there's no such thing as allergen-free fingerfoods?

When I saw that Daiya now makes two kinds of "cream cheese", I had to try it.  I picked up the chive and onion flavor and tried it baked with dill and egg inside of filo dough as a bread dip... which I wasn't all that fond of (Hubby liked it though... it was just too much 'cheese' for me).  Then, I tried it on bagles and it was lovely. And finally, I tried it rolled up inside of zucchini  and topped with fire roasted tomato and red pepper.   It was so pretty I had to share... just in time for superbowl parties!



Daiya Creamcheese Roll-ups

2 small zucchini
1 container Daiya chive and onion creamcheese
approx. 1/2 cup fire roasted tomatoes or red peppers


With a veggie peeler, peel thin strips of zucchini.  Place the strips on a greased cookie sheet and broil them  (475f) in the oven for about a minute (less if they start browning too quickly).  Spread a few chunks of Daiya cream cheese along each strip of zucchini.  Roll the strips up into "sushi-like" rolls and top with Fire roasted tomatoes or peppers.

I served these as-is at our small  (4 adults, 3 kids) New Years Eve party this year just as they appear here, but I also think they'd be great with a little balsamic vinegar sprinkled on top.

  1. These sound great and love that they are gluten free, dairy free, soy free! I just bought myself a mandolin slicer to make zoodles so I will give these a try, too. Be sure to share the recipe with Daiya!!
